Overview
Amber Waves is about brewing beer. Unlike many episodes of Good Eats, this episode only features one recipe, the process of brewing beer.
Recipes
The first segment features Alton Brown in a brewery shop. Brown spends a few minutes to discuss the difference between brewing lagers and ales. he selects a liquid pitchable yeast for his beer. He also gets some malt extract and some other grains for his brewery project. Finally, after a discussion of what hops is, he selects some Cascade hops and some Kent Golding hops for his beer. Over at the grocery store, he picks up some bottled spring water and a bag of ice for his beer.
The second segment features Brown starting to brew beer. For the full recipe, see the Amber Waves recipe page at foodnetwork.com. He sanitizes his equipment, and starts boiling his mash.
After the break, Brown strains out his wort, adds some yeast, and leaves his beer to ferment. Then, he shows how to conduct a second fermentation with some sugar.
In the final segment, Alton shows how to bottle his beer. Don't forget to age your beers for a week or two for the second fermentation. Then, he demonstrates the consumption of the beer, possibly the best part.
